Handmade Chef Knives
Our bladesmith is based in Horbury, West Yorkshire. All of his knives are made entirely by hand and finished in his forge using the highest quality steel and materials. Our bespoke set of chef knives feature stabilised oak handles with Sheffield steel finished in satin and laser etched with our MJK logo.
Our knives come with a lifetime sharpening guarantee.
The finest materials
To produce each unique set of knives, our bladesmith sources premium steel made in Sheffield called Silver Fox 100. It's a high carbon, fine grained stainless steel known for its great combination of toughness and corrosion resistance whilst maintaining an ease of re-sharpening.
After shaping the knives by hand and eye, they are heat treated and tempered to produce a hard and durable cutting edge. Each knife is hand-sanded before being given a satin finish and MJK laser etched into the blade.
The handles are made from Oak sourced in Nottingham. They are stabilised by forcing a resin deep into the wood pores using vacuum chambers. This process takes just under 300 hours, hardening the wood and making it much more resistant to water.
The oak is paired with black and white G10 liners and stainless steel pins before being hand-finished and polished.
Nakiri / Cleaver
Designed to offer a chopping cut that is ideal for preparing vegetables. Also fantastic to use on meats however bone is to be avoided due to the fine angle of the bevel. The spine of the knife has been left flat to aid clearing food from the board.
Chef's Knife
A great all-rounder and a perfect workhorse with a lovely distal taper that lends itself to a rocking and chopping style with great height on the board. The broad blade is suitable for cutting both proteins and vegetables. The spine of the knife has been rounded for comfort.
Paring Knife
Lightweight with a rounded spine for comfort, useful distal taper with a thin, pointy tip for detail work. Though small it can rock and essentially function like a mini chef's knife.
